Queen of Leftovers

I fixed a huge crock pot full of roast on a ball game night and it wasn't done in time {apparently cooking from frozen solid means you need to add an extra hour or two... jk, I knew that already!} and we ended up grabbing double cheeseburgers from McD's on the way so the roast went in the fridge after the game.

THEN my dear husband grilled extra burgers and hot dogs on purpose because I told him I didn't want to cook lunch the next day. The Mr. delivered, in fact he went a little over board.

All this abundance of food in my fridge meant that for the first time since our boys arrived I actually had leftovers.

Tonight I was lazy and didn't want to cook but I knew if I just nuked the leftovers the kids would complain so I decided to get fancy and make surprise casseroles.

Think cafeteria special but actually yummy!

I was very proud of these!

They took next to zero effort. I literally chunked the leftovers up and threw them in a casserole dish, added a 'sauce' that I thought would complement the flavors and topped the whole thing with grated cheese. I even cheated by nuking the leftovers first so I only had to pop it in the oven long enough for the cheese to melt. (10 minutes tops!) The best part is they really did taste yummy and the kids actually ate them happily. Score!

Since I'm super nice I figured I'd share my super complicated recipes...



1.) chunk up leftover hot dogs and cheeseburgers
2.) stir into leftover baked beans (we used bush's)
3.) throw mixture into casserole dish
4.) top with grated cheese
5.) pop in oven until heated through & cheese melts
1.) chunk up leftover potatoes and roast & mash into casserole dish
2.) top with A1 steak sauce (or your choice of sauce/bbq etc.)
3.) top with grated cheese
4.) more steak sauce
5.) bake till heated through & cheese melts


There you have it. 
Lazy dinner done. 
Pat yourself on the back because you just fixed a nutritious dinner ... cleaned out the fridge... AND kept from wasting food.
